酒心朱古力撻

 

甜撻皮材料:

牛油

麵粉

360g

雞蛋

製作:將所有材料混合搓成撻皮,用21018分鐘備用。

(50g搓一塊大撻皮,約25g搓一塊小撻皮)

 

材料:

朱古力

225g

70g

 

牛油

40g

雞蛋

淡忌廉

25g

Rum

40g

 

製作:

1.          朱古力用熱水座溶。

2.          糖、牛油用熱水座溶,與朱古力拌勻。

3.          淡忌廉煮熱,逐次撞入朱古力。

4.          蛋打滑,加入朱古力拌勻。

5.          加入Rum酒拌勻。

6.          倒入撻殼,用17012-13分鐘。

7.          出爐後撻面篩上糖霜即成。
